Mr Schubert brings over 20 years of experience to the club and, as a local, is excited to be apart of the Wauchope community.
"The Country Club is fantastic. It's a great lifestyle," he said.
"The cooking style is fast paced, less pedantic with the plating and that kind of thing, but basically it's another big section of my career that I'm really looking forward to."
He previously worked with the Rydges group. In fact, he was a key figure in establishing Zebu Bar and Grill, the very popular Port Macquarie restaurant.
"I was with the Rydges group for many years and worked my way up to head chef," he said.
"Zebu came along, which I had a lot to do with along a few other people. We built it from the ground up."
That is just some of the accolades Mr Schubert brings to the Country Club, with his exceptional cooking skills and balanced business mind a great set of ingredients to ensure the Country Club remains successful moving forward.
"I plan to change the menu shortly. It will be baby steps towards improving the overall quality of dining," he said.
"We will not be isolating our regulars whatsoever and many of the favourites will stay the same, however we will be introducing things that people hopefully haven't seen before.
"We will be striving for consistency and bringing in a nice freshen up for the restaurant.
"I have a lot of experience in putting structures in place behind the scenes, which is more from a business point of view.
"I'd like to bring my behind-the-scenes expertise to the table. I've learnt a lot from a lot of great people in the business industry."
